Title: Creamy Vegetable Chowder

1tbVegetables oil; +
1tsVegetable oil
1/4cOnion; chopped
1/4cGreen pepper; chopped
1/4cCelery; chopped
1/4cCarrots; chopped
1clGarlic; minced
2/3cLowfat cottage cheese;
10oz(1 cn) tomatoes;
1/2cWater;
1/8tsDried thyme;
1/2tsDried oregano;
1/4tsDried basil;
  Salt and pepper to taste;
1cCooked brown rice;

Heat oil in saucepan. Cook onion, pepper, celery, carrots, and garlic and cook until lightly browned, adding water if necessary to prevent drying. In blender, combine cottage cheese, tomatoes, water and spices. Blend until smooth and add to vegetables. Stir in rice, cook, stirring until heated through. Do not boil
